Ginger Pork and Fried Egg Donburi (Japanese Rice Bowl Dish)

For convenience, you can get thinly sliced pork for shabu shabu (hot pot) from Korean shops. Or you can wrap the pork slices in plastic wrap and tenderize them by pounding flat with a rolling pin.

Cook time: 10 mins
Yield: 2 serves

Ingredients:
  • 150 gm thin pork slices
  • ½ onion, shredded
  • 1 tsp minced garlic
  • ½ capsicum, shredded
  • 2 eggs
  • seaweed, to taste
  • 2 bowls steamed rice
Seasonings:
  • 1 Tbsp Japanese soy sauce
  • 1 Tbsp mirin
  • 2 Tbsp Japanese cooking wine
  • 1 Tsp Japanese vinegar
  • 1 tsp freshly grated ginger
  • 2 tsp sugar
  • 2 Tbsp water
Method:
  1. Heat oil in a pan over medium-high heat. Sauté onion until fragrant. Add garlic. Stir to combine. Add capsicum, then followed by the pork. Stir and cook till the surface turns white. Increase the heat. Pour in the seasonings and continue to cook until the sauce reduced by third. Set aside.
  2. In the meantime, use another little pan to fry two eggs to your liking.
  3. Serve the pork with sauce and eggs on top of two bowls of steamed rice. Sprinkle seaweed on top of the eggs. Enjoy !
