Salt and Pepper Chicken Wings

You can use freshly pounded black peppercorns, or get the store-bought coarsely black pepper, available at supermarkets. Don’t use black pepper powder for making this dish though.

Prep time: 5 mins + plus marinating time
Cook time: 10 mins
Yield: 2 to 3 serves

Ingredients:
  • 620 gm chicken wings, chopped
  • 2 garlic, sliced
Seasonings:
  • ¼ tsp salt
  • ½ tsp coarsely ground black pepper
  • ½ tsp five spice powder
  • ½ tsp sugar
  • 2 tsp Shaoxing wine
  • 1 tsp light soy sauce
Method:
  1. Blanch chicken wings in boiling water to remove blood and any impurities for about 3 minutes. Drain well. Mix with seasonings. Set aside for about 30 minutes.
  2. Heat oil in a wok or frying pan. Saute garlic over medium high heat. Make sure not to burn them. Add the chicken wings. Cook until both sides are lightly brown. Pour in the remaining seasonings. Cover and cook for about 4 to 5 minute, or until the wings are cooked through. Serve hot.
