Baked Honey Lemon Chicken Drumsticks

When it comes to making this dish, after adding honey, don’t leave your drumsticks unattended as you don’t want them to be burnt. Kecap Manis is a kind of Indonesian sweet soy sauce, with an aroma of palm sugar, available at Asian grocers and supermarkets.

Prep time: 10 mins
Cook time: 45 mins + plus 30 mins for marinating
Yield: 2 to 3 serves

Ingredients:
  • 6 (900gm) chicken drumsticks
  • 1 lemon, sliced
  • 3 bay leaves
  • 3 cloves garlic
  • 3 Tbsp (60ml) chicken stock
  • 2 Tbsp (40ml) honey
  • Marinade:
  • 1 Tbsp (20ml) Kecap Manis
  • 2 tsp (10ml) lemon juice
  • ¼ tsp sea salt
  • freshly grated black pepper, to taste
Method:
  1. Rinse the drumsticks and pat dry with kitchen paper. Mix with marinade and set aside for 30 minutes or overnight (put in fridge with cover). Preheat oven to 200C / 390F.
  2. Heat oil and saute the garlic cloves until aromatic over medium-high heat. Don’t burn them though. Add drumsticks and cook until both sides are lightly brown. Transfer the drumsticks and garlic with the marinade into a baking dish. Place lemon slices on top of the drumsticks. Add bay leaves. Pour in the chicken stock.
  3. Bake in the preheated oven for 30 minutes. Carefully remove the baking dish from oven. Flip the drumsticks to the other side. Drizzle honey over the drumsticks. Continue to bake for a further 15 minutes. Serve hot.
