Shredded Chicken and Green Bean Noodles with Sesame Dressing

This dish can be served cold. Get all the ingredients ready ahead and chill in fridge. You can assemble the ingredients and drizzle sesame sauce in the last minute before serving. The chicken stock can be reserved for making other dishes.

Prep time: 20 mins
Cook time: 25 mins
Yield: 2 to 3 serves

Ingredients:
  • ½ cup chicken stock
  • 1 star anise
  • 190 gm chicken breast
  • salt, to taste
  • pepper, to taste
  • 2 pieces (about 100 gm) green bean starch sheet
  • 1 Tbsp fish sauce
  • 2 tsp light soy sauce
  • 1 clove garlic, minced
  • sesame oil, to taste
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • sesame seeds, roasted
Sesame Sauce:
  • 2 Tbsp sesame paste
  • 2 Tbsp hot water
  • 1 Tbsp white vinegar
  • 1½ Tbsp light soy sauce
  • 3 tsp sugar
Method:
  1. Mix all ingredients of sesame sauce following the order in ingredient list. (The sesame paste is quite thick. By using hot water, it’s much easier to thin it out.)
  2. In a small pan, pour in the chicken stock. Add the star anise. Bring it to boil over medium heat. Add in the chicken. Cook for 15 minutes, or until it’s cooked through. Drain up. Shred it with two forks. Season with salt and pepper. Set aside.
  3. If your green bean starch sheet is quite large as mine, you may cut it into 4 portions with a pair of scissors. That will make it easier to handle. Soak in water until softened. Cook in boiling water for 2 to 3 minutes, until it becomes transparent. Drain up. Cut into strips, like noodles. Transfer into a large mixing bowl. Season with fish sauce, light soy sauce, minced garlic and sesame oil. Mix well.
  4. To assemble: Put the seasoned green bean starch noodles on a serving plate. Place cucumber, carrot and shredded chicken on top. Drizzle sesame sauce. Garnish with sesame seeds. Enjoy!
