Thai Style Baked King Snapper

Prep time: 15 mins
Cook time: 30 mins
Yield: 2 to 3 serves

Ingredients:
  • 560 gm King Snapper
  • salt, to taste
  • pepper, to taste
  • 2 tomatoes, cut in wedges
  • spring onion, to taste
Sauce:
  • 2 cloves garlic, roughly chopped
  • 1 tsp minced ginger
  • 1 to 2 red chillies, sliced
  • 2 Tbsp fish sauce
  • 1 Tbsp brown sugar
  • 1 Tbsp white rice vinegar
  • 2 Tbsp water
Method:
  1. Preheat oven to 190C / 375F.
  2. Scale and gut the fish. Rinse with tap water thoroughly. Wipe dry with kitchen towels. Season with salt and pepper on both sides and inside.
  3. Heat oil in a non-stick fry pan over medium high heat. Briefly pan-fry the fish until both sides are lightly brown. Line a large piece of foil (or baking paper) on a baking tray. Carefully transfer the fish on the foil. Drizzle the sauce. Arrange the tomato wedges and spring onion around. Fold the foil to wrap the whole fish inside. Bake in the preheated oven for about 25 to 30 minutes. Serve hot.
Notes:
  • If an oven is not handy to you, you might like to pan-fry the fish, then cook with the sauce.
