Ginseng Goji Chicken Soup

Cook time: 40 mins
Yield: 3 to 4 serves

Ingredients:
  • ½ (about 710 gm) chicken
  • 2 (about 28 gm) dried American ginseng
  • 3 slices ginger
  • 15 gm goji berries (aka wolfberry)
  • 35 gm white lotus seeds
  • 15 gm dried red dates, deseeded
  • 2 candied dates
  • 5 cups water
Instant Pot Method:
  1. Dried ginseng is quite sturdy and hard. Steam for 10 minutes, or until soft to cut. Rinse and drain all other ingredients. Set aside.
  2. Rinse the chicken and cut into 2 to 3 large chunks. Blanch in boiling water to remove the blood and impurities. Rinse and drain well.
  3. Put the chicken chunks and all other ingredients into Instant Pot, ginseng, ginger, goji, lotus seeds and candied dates. Pour in the water.
  4. Close the lid with steam release handle pointed to “Sealing”. Select “Soup”, high pressure cooking for 35 minutes. Press “Cancel”, quick release. Remove the lid. Press “Saute”, and cook for 10 minutes. Season with salt. Serve hot.
Stove-top Method:
  1. Follow the above instructions to prepare all the ingredients.
  2. Put all the ingredients in a large pot. Pour in 6 to 6½ cups of water. Bring it to boil over high heat. Then reduce heat to medium-low and simmer to 2 to 2½ hours. Season with salt. Serve hot.
